David wanted versatility in his new kitchen at The Whitchurch Inn, Tavistock, but had limited space for numerous appliances.
David enquired about the need for two ovens operating simultaneously on steam and convection and needed an appliance that could not only fry, but double up as a griddle to cook his well renowned dishes. This seemed impossible in such a tiny space.
David asked us to carry out a site survey and help to rectify his puzzling problem.
The Rational XS seemed the most obvious answer, the new unit released by Rational earlier this year compacts all the well-known qualities of the oven in to a much smaller space. To deliver on David’s desire to have both the steam and convection systems operating simultaneously and to we would install 2 units ‘stacked’ on top of each other, as seen in the images. We also installed the 2 panned VCC 112P Firma unit which gives the Chef the versatility of a fryer, griddle and low temp cooking all rolled in to one. For such a small kitchen this cook line can do it all.
